The spicy snack is very common in the southern districts of Tamil Nadu not just at teatime but also as a side dish to the main meal. Kara means spicy hot� and Sevu means fried noodles like "crispy". These beautiful slender crisps made with chickpea flour, rice flour, cumin, asafoetida, chilli powder, garlic paste and salt are a perfect snack on a rainy day. Everything is done manually “ right from the drying of the rice/spices to the pounding of the rice flour/ spices and mixing of the dough for the karasev. Many variations are also available with a similar medley of ingredients with minor differences like crushed ginger or garlic and pepper powder.
